Beets are rich in a very unique source of phytonutrients called betalains. Betalains have powerful antioxidant, anti-inflammatory and detoxification properties. They stimulate cell production and repair, which keep skin firm and youthful.

Time: 10 minutes

Ingredients:
1 cup gluten-free pancake mix
3/4 cup almond milk (or nut-free milk) | beauty fats + vitamin E
1/2 cup organic ricotta cheese
1/2 cup pureed beet | firming + repairing
1 teaspoon cinnamon | warming for skin micro-circulation
¼ teaspoon nutmeg |  anti-bacterial + promotes clear skin
1 T vanilla extract
(optional) Fruit or maple syrup for topping

Directions

  1. Place all of the ingredients in a bowl and mix until a little lumpy from beets.
  2. Coat a pan with a little olive oil or grass-fed organic butter. When hot, use a medium spoon to add to griddle. Each pancake should be about a 2 inches in diameter.
  3. Cook until pancakes bubble a bit on top and then flip. Serve with fruit, maple syrup and savor!
